Mango powder (AMCHUR) is made from unripe mango fruits. They are especially common in India. It has a fruity sweet-sour taste with camphor, resinous notes.

Mango is a unique fruit - it maintains youth and fresh skin for a long time, stops early aging of the body. Mango dishes and drinks enrich the blood and brain cells, renew and immediately relieve fatigue. Amchur powder improves mood and helps with depression. It has a positive effect on hearing loss, activates the work of the small intestine, improves blood circulation in lung tissue, reduces muscle fatigue. Normalizes the metabolism of calcium in the body, contributes to the improvement of vision.

To make amchur, unripe mango fruits are taken, cleaned, cut and dried in the sun. Then the dried mango pieces should be ground into a powder. About 27 kg of raw mangoes are required to make 1 kg of amchur. The flesh of an unripe mango is different from a ripe one because it contains almost no sugar.

Ingredients: dried mango powder contains iron, vitamin A (carotene), vitamin B2 (riboflavin), and a large amount of vitamin C. Also, amchur powder is very high in citrus acids.

Culinary Uses: The main purpose of amchur is to acidify dishes. It is mostly used in vegetable curries, added to hot and sweet spices, sour drinks, soups, vegetable dishes, salads, snacks, fruit and vegetable salads.

Mango powder removes and dissolves savda (black bile, corresponding to vata dosha) and mucus. Mango powder can be used to make a honey drink that can be consumed for a long time to maintain the normal state of all four moisture levels in the body: 1 glass of honey, 2 glasses of water. Boil for 40-45 minutes, constantly removing the yellow wax, until only one honey remains, that is, all the water must boil. Then take mango powder (1 tablespoon), mix it in a third of a glass of water and slowly pour it into the honey, boil it, filter it through cheesecloth and pour it into a glass container. Take 1 tablespoon of honey 2-3 times a day 30 minutes before meals. You can mix half a glass of water. They can be drunk for a long time, 2-3 months.

Be careful! Care must be taken with mango powder as this spice catches fire easily.
