The high nutritional and medicinal properties of garlic are due to its extremely rich chemical composition. It contains much less water (60-64%) than other vegetables, more carbohydrates (more than 20%) and more nitrogen (about 7%) than onions. The fiber content is 0.7%. Garlic bulbs contain 35-42% dry matter, which is associated with a large amount of inulin (20-27%), which, when exposed to stomach acids, is converted into a valuable sugar for the human body - fructose. Bulbs also contain 6-8% crude protein, 0.5% reducing sugars and about 5% fat. They contain amino acids that are especially valuable to humans: lysine. Garlic contains flavonoids - substances that release vasospasm, lower blood pressure and help remove cholesterol from the body. Polysaccharides - fructosans that accumulate in bulbs - have a high nutritional value. In addition, garlic contains pentosans, glycosides, pectin substances, organic acids, phytosterols.

Garlic is rich in mineral salts. The ash contains 17 chemical elements, including potassium, phosphorus, calcium, magnesium, manganese, copper, sulfur, nickel, chlorine, titanium, selenium, sodium, lead, boron. Garlic is especially rich in iron (1.5 mg%), zinc (1.0 mg%) and iodine salts. The latter is especially important for the human body. 1 kg of garlic contains 0.94 mg, which may affect thyroid function. Garlic bulbs are not high in vitamins. They contain 7-25 mg% ascorbic acid (vitamin C), carotene or provitamin A, vitamin B1, or thiamine, B2 and PP. However, garlic is superior in thiamine content to all other vegetables. Garlic leaves and young arrows are very rich in vitamin C - up to 140 mg%. They also contain carotene, vitamin PP. The dry matter content of the leaves is 10.2-19.2%, the sugar content is 2.3-4.6%.
